Higbee Honey will never bottle its honey in plastic for a few reasons.
- First, glass is more reusable than plastic. Glass can be reused in your own cupboard or returned to Higbee Honey for reuse! This is better for our environment as well as our bottle supply. Due to recent supply chain issues, glass bottles have been difficult to acquire at times, so when you return your jars to Higbee Honey we are able to refill them, which helps us ensure a more consistent supply to our customers.
- Secondly, plastic leaches chemicals into your honey, especially when heated. Not only can this be harmful to your health, it can also influence the flavor of Higbee Honey. We want you to taste only those pure and natural flavors provided by Higbee Honey.
- Finally, by using glass jars and high-quality, vinyl labels, Higbee Honey enables you to safely decrystallize your honey by simply placing the jar into a pot of warm water (not to exceed 110° F) for 2-3 hours.
Absolutely! Pure, raw honey has natural anti-bacterial properties which prevents bacteria from propagating, which means that Higbee Honey will never ferment unless you introduce moisture into it. Even then, the moisture content must be above 18-22 percent for fermentation to begin. Depending upon the variety of honey, Higbee Honey is typically only 12-16 percent moisture content.
Crystallization is also one of the reasons Higbee Honey always uses glass jars and high-quality vinyl labels. This enables you to simply place your honey jar into a pot of warm water (not to exceed 110° F) for 2-3 hours in order to decrystallize or ‘melt’ it back down. Once you’ve melted your honey back down, providing you’ve completely melted it – your Higbee Honey should be crystal free for another 2 weeks to 1 year depending on the variety of honey.
Pure, raw, unfiltered honey has a tendency to crystallize over time due to the large particles of pollens, wax and propolis that are still present in the honey. While these particles have health benefits for us, they also act as the condensation nuclei crystals need to begin forming. This is one of the main reasons honey you find on store shelves rarely crystallizes – it has been filtered to remove these particles to prevent crystallization.
Well, not necessarily. ‘Prevent’ really isn’t the right word to describe the effect of local honey on allergies. Minimization of allergy symptoms is a more accurate description, but another inaccuracy is that any ‘local’ honey will help with seasonal allergies. In truth, only local, raw, unfiltered honey has been shown to minimize seasonal allergy symptoms. This is due to the presence of pollens in the honey which was gathered from the local area by the bees while gathering nectar. In essence, when you consume pure, raw, unfiltered honey from the local area where you are experiencing seasonal allergies, you are actually micro-dosing yourself. This allows your immune system to settle down a bit and not overreact when those local pollens start floating around in the air. Filtered honeys and pasteurized honeys do not have this beneficial effect because those pollens either do not exist in the honey, or they have been damaged by heat.
